Chinese Smoked Salmon Salad

  • 50g rice vermicelli noodles
  • 1 tsp sesame oil
  • 4 grated pickled beetroots
  • 1 carrot, spiralised into noodles
  • 1 cucumber, spiralised into noodles
  • 1 daikon, spiralised into noodles
  • 1 pink grapefruit, segmented
  • 2 spring onions, sliced
  • To Serve
  • 4 slices of smoked salmon
  • Handful of toasted peanuts
  • 2 tbsp plum sauce
  • Cook the noodles according to pack instructions, then drain and toss with the sesame oil. Keep chilled in the fridge.
  • Toss together all of the other salad ingredients together, then lay on plates topped with the sliced smoked salmon and a drizzle of plum sauce.
