Chipotle Halloumi Skewers

  • 1 tsp smoked paprika
  • 2 tbsp chipotle paste
  • 1 tbsp oil
  • 1 lime, zest and juice
  • 1 tsp brown sugar
  • 500g halloumi, cut into bite-size chunks
  • Flatbreads and slaw, to serve
  • Mix the chipotle, oil, paprika, lime zest and sugar in a bowl, then season well. Thread the halloumi chunks into 4 metal skewers, and coat thoroughly with the marinade for an hour in the fridge.
  • Grill the skewers for 10-12 mins, turning once or twice, until charred and sticky. Serve on plates sprinkled with fresh lime juice, and enjoy with flatbreads and homemade slaw.
