Chipotle Halloumi Skewers
- 1 tsp smoked paprika
- 2 tbsp chipotle paste
- 1 tbsp oil
- 1 lime, zest and juice
- 1 tsp brown sugar
- 500g halloumi, cut into bite-size chunks
- Flatbreads and slaw, to serve
- Mix the chipotle, oil, paprika, lime zest and sugar in a bowl, then season well. Thread the halloumi chunks into 4 metal skewers, and coat thoroughly with the marinade for an hour in the fridge.
- Grill the skewers for 10-12 mins, turning once or twice, until charred and sticky. Serve on plates sprinkled with fresh lime juice, and enjoy with flatbreads and homemade slaw.
