Chipotle Tofu with Smashed Avo
- 2 tbsp olive oil
- 225g smoked firm tofu, cubed
- 3 tbsp chipotles in adobo
- ½ tsp salt
- 3 spring onions, sliced
- 150g halved cherry tomatoes
- Tacos to serve
- 1 avocado
- 1 lime, zest and juice only
- Make the smashed avocado by mashing the avocado flesh with ½ tsp of salt and the lime zest and juice (you can add some chilli flakes or tahini, if you fancy it). Season to taste, and set aside.
- Heat a frying pan and add the oil, then fry the tofu until crisp. Add the chipotles, stir-fry for a few mins, then season and add the tomatoes and spring onions. Cook on a medium heat for 8 mins, then serve with the avocado and tacos. Yum!
