Chocolate and Amaretto Pudding

  • 500ml milk
  • 1 tbsp flour
  • 2 tbsp caster sugar
  • 1 vanilla pod, seeds removed
  • 80ml Amaretto or other nutty liqueur
  • 100g chopped dark chocolate
  • 50g butter
  • Crushed almond biscuits, to serve
  • Gently warm the milk in a saucepan. In a separate saucepan, mix the flour, vanilla seeds and sugar until smooth, then gradually whisk in the warmed milk until silky. Cook gently for 3 mins, stirring constantly.
  • Whisk the liqueur into the mixture until thickened, then remove from the heat and stir in the butter and chocolate to melt. Spoon into serving glasses, sprinkle with crushed biscuits, and enjoy warm.
