Chorizo and Bean Burgers

  • 100g cooking chorizo, skin removed
  • 3 pork sausages, squeezed from skins
  • ¼ tsp smoked paprika
  • 1 tbsp lime juice
  • Chopped coriander
  • 200g tin of mixed beans, drained
  • 1 egg, beaten
  • 1.5 tbsp olive oil
  • 2 rolls, avocado, salads etc to serve
  • Pulse the sausagemeat, chorizo, paprika, lime juice and coriander until well combined, then add the beans and some seasoning, and pulse again to mix. Tip into a bowl and mix in half the egg to bind. Shape with damp hands into two chunky patties, then cover and chill for 15 mins. Preheat the oven to 200C.
  • Heat the oil in a pan and fry the patties for 3 mins on each side, then transfer to a baking sheet and cook for 10 mins. Serve stuffed into rolls with avocado, salad and your choice of other fillings.
