Chorizo and Mozzarella Melt Sandwich

  • 130 chorizo, sliced on the diagonal
  • 150g mozzarella, sliced into discs
  • Black pepper
  • 1⁄2 baguette, sliced on one side and pulled open
  • Handful of spinach leaves
  • Chuck the chorizo into a large frying pan over a medium heat, and cook for 5 minutes, turning halfway through. Lay the mozzarella slices over the top of the chorizo as it’s cooking and spoon some of the paprika-rich oil over the top. Cook for a couple of minutes to allow the cheese to melt, then season with plenty of black pepper.
  • Spoon the whole lot into the baguette, then drizzle the pan juices over the top. Toss in a few spinach leaves, and serve. YUM!
