Chorizo and Prawn Quesadilla

  • 1 tbsp olive oil
  • 1 red capsicum, sliced
  • ½ red onion, sliced
  • 70g chorizo, finely cubed
  • 1 crushed garlic clove
  • 1 tbsp chipotle paste, or similar
  • ½ tsp each of ground cumin and coriander
  • 100g chopped raw king prawns
  • 1 lime, juice only
  • 2 large flour tortillas
  • Guac and salsa, to serve
  • Heat the oil in a pan, and gently fry the capsicum and onion for about 10 mins. Chuck in the chorizo, fry for about 5 mins more, then stir in the garlic, cumin, coriander, prawns, and chipotle paste, and fry for a minute or two. Season with salt, pepper, and lime juice.
  • Evenly spread the mixture over a tortilla, and top with the second one. Place the ‘sandwich’ in a very hot frying pan, and cook on both sides for 2 mins. Cut into quarters, and serve with your favourite sides.
