Chorizo Couscous Salad
- 250g couscous
- 300ml veg stock
- 150g chopped chorizo
- 1 red and 1 yellow pepper, chopped
- 1 chopped garlic clove
- 1 chopped tomato
- Handful of basil, mint, and parsley, chopped
- Handful of chopped olives
- ½ lemon, juice only
- 2 tbsp olive oil
- Salt and pepper
- In a large bowl, add the couscous and the hot veg stock, then leave for 4 mins. Meanwhile, fry the chorizo, garlic and peppers for 3 mins, before chucking in the tomato, olives, lemon, olive oil, herbs and seasoning. Cook for 2 mins, then add to the couscous and mix together. Serve immediately.
