Chorizo Couscous Salad

  • 250g couscous
  • 300ml veg stock
  • 150g chopped chorizo
  • 1 red and 1 yellow pepper, chopped
  • 1 chopped garlic clove
  • 1 chopped tomato
  • Handful of basil, mint, and parsley, chopped
  • Handful of chopped olives
  • ½ lemon, juice only
  • 2 tbsp olive oil
  • Salt and pepper
  • In a large bowl, add the couscous and the hot veg stock, then leave for 4 mins. Meanwhile, fry the chorizo, garlic and peppers for 3 mins, before chucking in the tomato, olives, lemon, olive oil, herbs and seasoning. Cook for 2 mins, then add to the couscous and mix together. Serve immediately.
