Chorizo Goulash
- 1 tbsp oil
- Knob of butter
- 700g beef or lamb sausages, chopped
- 300g chorizo, chopped
- 2 sliced onions
- 1 chopped garlic clove
- 2 tbsp flour
- 1 tbsp smoked paprika
- 2 chopped red chillies
- 1 red capsicum, chopped
- 200ml beef stock
- 175ml soured cream
- 1 tbsp parsley, chopped
- Rice, cooked to serve
- Preheat the oven to 150C. Heat the oil and butter in a frying pan and fry the sausages and chorizo for 7 mins, or until browned. Remove and set aside. Chuck in the onions and garlic and fry for 4 mins, then stir in the flour and cook for 3 mins more. Add the paprika, chillies, capsicum, then pour in the stock, return the meat to the pan, and cook in the oven for 35 mins.
- Remove the pan from the oven, skim off any excess fat from the surface, and stir in the cream and parsley. Serve with rice or crusty bread.
