Christmas Lunch Meatloaf
- 3 chopped onions
- 50g butter
- 700g minced turkey
- 500g minced pork
- 250g smoked bacon, chopped
- 70ml port
- 200g cooked chestnuts, chopped
- 100g dried cranberries
- 1 orange, zest only
- 1 tsp thyme
- 5 chopped sage leaves
- 2 crushed garlic cloves
- 80g rye crackers, blitzed to a crumb
- All the trimmings and gravy, to serve
- Fry the onions in butter for 15 mins to soften and turn golden, and butter a 900g loaf tin. Heat the oven to 200C, and combine all of the ingredients in a large mixing bowl. Work everything together to form a massive meatball, and pop the mixture into the buttered tin. Pack it in and shape the top with a spatula to resemble a loaf.
- Cover the meatloaf with foil and bake for 1 hour. Heat the grill to medium, and grill for 10 mins or until nice and golden on top. Leave to rest for 20 mins, then tip onto a serving platter and slice. Serve with all your favourite roast dinner trimmings and gravy.
