Christmas Lunch Meatloaf

  • 3 chopped onions
  • 50g butter
  • 700g minced turkey
  • 500g minced pork
  • 250g smoked bacon, chopped
  • 70ml port
  • 200g cooked chestnuts, chopped
  • 100g dried cranberries
  • 1 orange, zest only
  • 1 tsp thyme
  • 5 chopped sage leaves
  • 2 crushed garlic cloves
  • 80g rye crackers, blitzed to a crumb
  • All the trimmings and gravy, to serve
  • Fry the onions in butter for 15 mins to soften and turn golden, and butter a 900g loaf tin. Heat the oven to 200C, and combine all of the ingredients in a large mixing bowl. Work everything together to form a massive meatball, and pop the mixture into the buttered tin. Pack it in and shape the top with a spatula to resemble a loaf.
  • Cover the meatloaf with foil and bake for 1 hour. Heat the grill to medium, and grill for 10 mins or until nice and golden on top. Leave to rest for 20 mins, then tip onto a serving platter and slice. Serve with all your favourite roast dinner trimmings and gravy.
