Citrus Crusted Chicken
- 1 lime, zest and juice, plus the zest of
- 1 extra lime
- 2 tsp black pepper
- 2 crushed garlic cloves
- 1 tsp salt flakes
- 2 tsp thyme leaves
- 6 tbsp olive oil
- 100g smoked streaky bacon, chopped
- 6 chicken breasts, skin on, skin scored three times
- Place the lime zest, pepper, garlic, salt and thyme in a mortar. Pound it all into a paste, add 4 tbsp of olive oil and the lime juice, and mix well.
- Heat 2 tbsp of oil in a pan, and fry the chopped bacon until the fat is released. Add the chicken breasts and fry for 3 minutes on each side until golden. Discard the bacon or save for another day, and then transfer the breasts to a roasting tray, skin side up, and brush with your citrusy paste. Roast for 20 minutes, basting regularly, and serve with your choice of potatoes and veggies.
