Citrus Syrup Duck Breast
- 1⁄2 large duck breast
- Salt and pepper
- 1 orange, juice only
- 1 lime, juice only
- 1 tbsp soy sauce
- 2 tbsp golden syrup
- Cooked rice, to serve
- Coriander leaves, to serve
- Score the skin of the duck breast three or four times with a sharp knife, and season well with salt and pepper. Heat up a frying pan (you won’t need any oil) until banging hot, and then cook the duck, skin side down, for five minutes to render the fat. Flip the duck over to cook the other side.
- Meanwhile, mix together the citrus juices, the soy sauce, and the syrup in a small bowl, and pour all over the duck while it’s cooking, skin-side up. Cook for 5 minutes, until the sauce is thick, sticky, and glossy. Allow to rest for 5 minutes, then serve sliced on a bed of rice with coriander leaves.
