Classic Chicken Breast and Avo Salad
- 1 chicken breast, skinless
- 2 tsp olive oil
- 1 tsp smoked paprika
- For the Salad
- ½ avocado, diced
- 1 tsp white wine vinegar
- 1 tbsp parsley, chopped
- 1 tomato, chopped
- Half red onion, sliced
- Heat the grill to medium, and rub the chicken all over with 1 tsp of olive oil and paprika. Cook for about 5 mins on each side until nicely charred, and cooked all the way through.
- Combine the salad ingredients in a bowl, season well, and drizzle in the remaining oil. Thickly slice the chicken, and serve with the salad piled alongside.
