Classic Chicken Breast and Avo Salad

  • 1 chicken breast, skinless
  • 2 tsp olive oil
  • 1 tsp smoked paprika
  • For the Salad
  • ½ avocado, diced
  • 1 tsp white wine vinegar
  • 1 tbsp parsley, chopped
  • 1 tomato, chopped
  • Half red onion, sliced
  • Heat the grill to medium, and rub the chicken all over with 1 tsp of olive oil and paprika. Cook for about 5 mins on each side until nicely charred, and cooked all the way through.
  • Combine the salad ingredients in a bowl, season well, and drizzle in the remaining oil. Thickly slice the chicken, and serve with the salad piled alongside.
