Classic Poached Pears
- 4 ripe pears, peeled but leaving the stalk intact
- 1 x 750ml bottle of dry white wine
- 1 red chilli
- 1 stick of cinnamon
- 2 cloves
- 1 bay leaf
- 300g sugar
- Place the pears upright in a saucepan (you can trim the bottoms to make a flat surface). Add the wine, spices, and sugar. Simmer until nicely tender, then cover and allow to cool. Leave the pears in this poaching liquid for at least a day for maximum flavour.
- When ready to serve, remove some of the poaching liquor and boil until nicely sticky and syrupy for glazing. Serve as a dessert with ice cream, or with strong blue cheese - yummy!
