Classic Sloppy Joes
- 2 tbsp olive oil
- 400g beef mince
- 1 chopped onion
- 1 green capsicum, chopped
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp brown sugar
- 1 tbsp vinegar
- 4 tbsp tomato ketchup
- 1 tbsp mustard
- 300ml beef stock
- 4 burger buns
- Hot sauce, to serve
- Heat up half the oil in a frying pan, and crumble in the mince. Fry for 10 mins to brown, then tip onto a plate. Heat the rest of the oil and fry the capsicum and onion for 8 mins to soften, then stir in the garlic, sugar, and paprika, and return the mince to the pan. Sizzle for 2 mins.
- Add the vinegar to the pan and stir through the mustard and ketchup. Pour in the stock, and leave to simmer gently for 20 mins to thicken. Season to taste, then toast the burger buns and spoon in the glossy mince and sauce. Add some hot sauce, and serve.
