Classic Veggie Pakoras
- 250g gram flour
- 50g self-raising flour
- ½ tsp chilli powder
- 1 tsp garam masala
- 1 tsp tandoori masala
- 1 tbsp lemon juice
- 300g chopped onions
- 300g potatoes, peeled and cubed
- 3 chopped spring onions
- 8 spinach leaves, chopped
- Handful of chopped coriander leaves
- 1 tsp chopped green chilli
- 1 tsp salt
- Oil for deep frying
- Sift the flours into a bowl and stir in the garam masala, tandoor masala and chilli powder. Add the lemon juice and then gradually pour in enough water to form a smooth batter thick enough to coat the back of a spoon. Leave to stand for 15 mins, then add all the remaining ingredients (except the oil) and mix well.
- Heat the oil in a frying pan to a sizzling temperature. Carefully lower tablespoons of the batter mixture in batches into the oil and fry for 5 mins, or until the pakoras are crisp, golden brown, and cooked through. Drain on kitchen paper, season with salt flakes and serve hot with dips and chutney.
