Classic Veggie Pakoras

  • 250g gram flour
  • 50g self-raising flour
  • ½ tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp tandoori masala
  • 1 tbsp lemon juice
  • 300g chopped onions
  • 300g potatoes, peeled and cubed
  • 3 chopped spring onions
  • 8 spinach leaves, chopped
  • Handful of chopped coriander leaves
  • 1 tsp chopped green chilli
  • 1 tsp salt
  • Oil for deep frying
  • Sift the flours into a bowl and stir in the garam masala, tandoor masala and chilli powder. Add the lemon juice and then gradually pour in enough water to form a smooth batter thick enough to coat the back of a spoon. Leave to stand for 15 mins, then add all the remaining ingredients (except the oil) and mix well.
  • Heat the oil in a frying pan to a sizzling temperature. Carefully lower tablespoons of the batter mixture in batches into the oil and fry for 5 mins, or until the pakoras are crisp, golden brown, and cooked through. Drain on kitchen paper, season with salt flakes and serve hot with dips and chutney.
