Coconut and Salmon Noodle Salad
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp sesame seeds
- 1 tbsp clear honey
- 50g grated coconut
- 3 tomatoes, chopped
- 1 tbsp fresh parsley
- 1 chilli, seeds removed, chopped 2 spring onions, chopped
- 100g rice noodles,soaked in hot water until softened, drained
- 50g salmon fillet, poached and skinned
- Take a bowl, and throw in all of the ingredients except for the noodles and the salmon. Mix well to create your fresh dressing.
- Pour your dressing all over your drained rice noodles, and mix together to ensure every noodles is coated with the flavour. Place the noodles in a serving bowl, top with the poached salmon fillet, and drizzle with a little extra soy sauce. Easy!
