Coconut and Salmon Noodle Salad

  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp sesame seeds
  • 1 tbsp clear honey
  • 50g grated coconut
  • 3 tomatoes, chopped
  • 1 tbsp fresh parsley
  • 1 chilli, seeds removed, chopped 2 spring onions, chopped
  • 100g rice noodles,soaked in hot water until softened, drained
  • 50g salmon fillet, poached and skinned
  • Take a bowl, and throw in all of the ingredients except for the noodles and the salmon. Mix well to create your fresh dressing.
  • Pour your dressing all over your drained rice noodles, and mix together to ensure every noodles is coated with the flavour. Place the noodles in a serving bowl, top with the poached salmon fillet, and drizzle with a little extra soy sauce. Easy!
