Coconut Dal with Golden Paneer
- 200g red lentils
- 400ml tin of coconut milk
- 1 chopped onion
- 2 chopped green chillies
- 1 tsp ground turmeric
- Oil for frying
- 225g cubed paneer
- 1 tsp garam masala
- Handful of chopped coriander
- Add the lentils, coconut milk, onion, chillies and turmeric to a pan with 300ml water and plenty of seasoning. Simmer for 30 mins, stirring occasionally.
- Meanwhile, heat some oil in a frying pan and fry the paneer cubes until crisp and golden all over. Sprinkle with garam masala and seasoning, and toss to coat. Spoon the lentils into bowls, top with the paneer and sprinkle with coriander to serve.
