Cod Kiev
- 100g flour
- 2 beaten eggs
- 150g breadcrumbs
- 4 cod fillets or other firm white fish
- 3 tbsp oil for frying
- For the Butter
- 2 crushed garlic cloves
- Finely chopped parsley
- 100g softened butter
- ½ lemon, juice only
- Make the Kiev butter by mixing the ingredients in a bowl with a pinch of salt. Tip the flour into a bowl and season well, then add the beaten eggs to a second bowl, and the breadcrumbs to a third. Pat the fish dry, then dredge in the flour, then the egg, and finally coat in the breadcrumbs.
- Preheat the oven to 220C. Heat most of the oil in a frying pan and fry the breaded cod for 5 mins, or until golden all over. Transfer to the oven, and roast for 10 mins, then top with a tsp of the herbed butter, and pop back in the oven for 5 mins more. Serve with chips and salad.
