Cod Kiev

  • 100g flour
  • 2 beaten eggs
  • 150g breadcrumbs
  • 4 cod fillets or other firm white fish
  • 3 tbsp oil for frying
  • For the Butter
  • 2 crushed garlic cloves
  • Finely chopped parsley
  • 100g softened butter
  • ½ lemon, juice only
  • Make the Kiev butter by mixing the ingredients in a bowl with a pinch of salt. Tip the flour into a bowl and season well, then add the beaten eggs to a second bowl, and the breadcrumbs to a third. Pat the fish dry, then dredge in the flour, then the egg, and finally coat in the breadcrumbs.
  • Preheat the oven to 220C. Heat most of the oil in a frying pan and fry the breaded cod for 5 mins, or until golden all over. Transfer to the oven, and roast for 10 mins, then top with a tsp of the herbed butter, and pop back in the oven for 5 mins more. Serve with chips and salad.
