Cod with Mango Salsa
- 2 cod fillets
- 1 lime, zest and juice
- 1 mango, chopped
- 1 avocado, sliced
- ¼ cucumber, chopped
- 150g cherry tomatoes, quartered
- 1 red chilli, chopped
- 2 sliced spring onions
- Handful of chopped coriander leaves
- Preheat the oven to 200C. Pop the fish fillets in a baking dish, and pour over about half of the lime juice, a sprinkling of zest, and some black pepper. Bake for 8 mins, or until just flaky.
- Meanwhile, place the remaining ingredients - plus the rest of the lime juice and zest - in a bowl, and mix to combine. Spoon onto plates, top with the baked fish, and spoon over the remaining juices.
