Cod with Mango Salsa

  • 2 cod fillets
  • 1 lime, zest and juice
  • 1 mango, chopped
  • 1 avocado, sliced
  • ¼ cucumber, chopped
  • 150g cherry tomatoes, quartered
  • 1 red chilli, chopped
  • 2 sliced spring onions
  • Handful of chopped coriander leaves
  • Preheat the oven to 200C. Pop the fish fillets in a baking dish, and pour over about half of the lime juice, a sprinkling of zest, and some black pepper. Bake for 8 mins, or until just flaky.
  • Meanwhile, place the remaining ingredients - plus the rest of the lime juice and zest - in a bowl, and mix to combine. Spoon onto plates, top with the baked fish, and spoon over the remaining juices.
