Cod with Parsley and Lemon Crust

  • 650g cod fillet
  • 90g white breadcrumbs
  • 3 tbsp chopped parsley
  • 2 crushed garlic cloves
  • ½ lemon, zest only
  • 70g melted butter
  • Squeeze of lemon
  • Season the fish fillet with salt and pepper and preheat the oven to 220C. Mix the breadcrumbs, parsley, lemon zest, garlic and some seasoning in a bowl, then add the lemon juice and butter and mix well to combine.
  • Place the cod fillet in a shallow oven dish and press the breadcrumb mixture onto the surface to form a crust. Bake for 25 mins or until the crust is golden and the fish is cooked through, then serve with new potatoes and your choice of greens.
