Confit Duck Burger
- 1 tbsp olive oil
- 1 sliced red onion
- 2 tbsp red onion marmalade
- 500g confit duck
- 4 burger buns
- 1 tbsp butter
- 1 tbsp mustard
- 80g rocket
- Sides and sauces, as you wish
- Heat the oil in a small saucepan and fry the onion for 15 mins until caramelised. Stir in the marmalade, and remove from the heat. Meanwhile, shred the confit duck and season to taste.
- Cut your burger buns in half and spread the cut sides with softened butter. Griddle for a minute, or until char-lines appear. Spread one side of the bun with mustard and the other with the onion mixture, then fill with shredded duck and rocket leaves. Serve immediately.
