Confit Duck Burger

  • 1 tbsp olive oil
  • 1 sliced red onion
  • 2 tbsp red onion marmalade
  • 500g confit duck
  • 4 burger buns
  • 1 tbsp butter
  • 1 tbsp mustard
  • 80g rocket
  • Sides and sauces, as you wish
  • Heat the oil in a small saucepan and fry the onion for 15 mins until caramelised. Stir in the marmalade, and remove from the heat. Meanwhile, shred the confit duck and season to taste.
  • Cut your burger buns in half and spread the cut sides with softened butter. Griddle for a minute, or until char-lines appear. Spread one side of the bun with mustard and the other with the onion mixture, then fill with shredded duck and rocket leaves. Serve immediately.
