Confit Hoisin Duck Canapes
- 2 confit duck legs
- 4 tbsp hoisin sauce
- 1.5 limes, juice only
- 1 cucumber
- 1 shredded spring onion
- ½ finely sliced chilli
- Sesame seeds for sprinkling
- Shred the duck legs into a bowl and mix the meat with 3 tbsp of hoisin and the juice of 1 lime. Fry the mixture in a pan with a little oil for a few mins, then set aside. Slice the cucumber into 40 rounds, and top each with a spoonful of the duck mixture, then mix the rest of the hoisin with the remaining lime juice, and drizzle over the meat. Add some spring onion, chilli and sesame seeds, and serve immediately.
