Corn and Courgette Fritters
- 200g tin of sweetcorn, drained
- 2 chopped spring onions
- 50g grated courgette
- 1 tsp smoked paprika
- 50g self-raising flour
- 1 beaten egg
- 40ml milk
- Hot sauce, for dipping
- Mix all the ingredients (apart from the dipping sauce) with some seasoning in a large bowl to make a thick batter. Heat a splash of oil in a pan and spoon in 4 x burger-sized fritters. Fry for 3-4 mins or until browned and set on the bottom, then flip and cook for 3 mins more on the other side. Serve with hot sauce and your choice of sides.
