Corn and Courgette Fritters

  • 200g tin of sweetcorn, drained
  • 2 chopped spring onions
  • 50g grated courgette
  • 1 tsp smoked paprika
  • 50g self-raising flour
  • 1 beaten egg
  • 40ml milk
  • Hot sauce, for dipping
  • Mix all the ingredients (apart from the dipping sauce) with some seasoning in a large bowl to make a thick batter. Heat a splash of oil in a pan and spoon in 4 x burger-sized fritters. Fry for 3-4 mins or until browned and set on the bottom, then flip and cook for 3 mins more on the other side. Serve with hot sauce and your choice of sides.
