Courgette, Blue Cheese, and Red Onion Tart
- 375g ready-rolled puff pastry
- 1 egg, beaten
- 50g butter
- 3 red onions, sliced
- 2 tbsp balsamic vinegar
- 1 courgette, cut into ribbons
- 100g gorgonzola or similar
- Preheat the oven to 200C. Roll the pastry out to an A4-sized rectangle, then slide onto a baking tray and brush with egg. Bake for 20 mins. Meanwhile, melt the butter in a frying pan and add the onions with a pinch of salt, cook for 10 mins until softened, then pour in the balsamic and cook for another 8 mins or until sticky and caramelised.
- Spoon the red onion mixture all over the pastry, leaving a crust around the outside border. Top with the courgette ribbons and blobs of the gorgonzola. Pop back in the oven for 15 mins, until golden, flaky, and bubbling, then serve.
