Courgette Fries

  • 2 tbsp seasoned flour
  • 2 courgettes, cut into 1cm batons
  • 15g grated parmesan
  • Oil for deep frying
  • Mix the flour with 2 tbsp of water to make a thick batter. Season and mix in the courgette batons. Deep fry the battered courgettes in sizzling oil for 5-6 mins or until golden and crisp, then remove and drain on kitchen paper. Scatter with parmesan and some more black pepper, and serve with mayo or any dip you fancy.
