Couscous Patties

  • 250ml couscous
  • 250ml veg stock
  • ½ tsp each cumin and paprika
  • ½ chopped red onion
  • 40g dried cranberries, chopped
  • 2 eggs
  • ½ avocado, finely sliced
  • 3 tbsp sesame seeds
  • ½ bunch dill
  • Oil for frying
  • Avocado cream or guacamole, to serve
  • Pop the couscous, cumin, paprika and stock in a bowl, season well and set aside for 10 mins. When tender, fluff with a fork and leave to cool. Stir in the onion, berries and eggs, then transfer half to a food processor and whizz to a paste. Mix back into the couscous mixture, then form into 12 balls before flattening into patties.
  • Fry the patties for 3 mins on each side in some oil until golden, then drain on kitchen paper. Serve with a dollop of avocado cream and some homemade coleslaw. Nice!
