Couscous Salad with Feta and Peaches

  • 3 peaches, stoned and quartered
  • 40g mixed seeds
  • 150g feta
  • 100g pack of garlic and lemon couscous or similar
  • Place the peach quarters in a roasting tin with chunks of feta and the seeds, drizzle with a good glug of olive oil, and bake at 200C for 15 mins.
  • Cook the couscous according to pack instructions, then toss with the warm peach and seeds mixture. Season to taste, and serve.
