Couscous Salad with Spiced Turkey Mince

  • 2 tbsp oil
  • 2 chopped onion
  • 350g turkey mince
  • 1 tbsp ground cumin
  • 1 tsp each ground cinnamon and turmeric
  • 100g chopped dried apricots
  • 400ml veg stock
  • For the Couscous
  • 300g couscous
  • 2 lemons, zest only
  • 4 tbsp chopped mint leaves
  • 50g chopped roasted cashews
  • Fry the onions in the oil for 5 mins to soften, then stir in the mince and some seasoning and cook until browned. Stir in the spices, apricot and stock, then simmer for 15 mins.
  • Meanwhile, add 450ml boiling water to the couscous and leave to stand for 10 mins or according to packet instructions. When ready, fluff with a fork and stir through the zest and mint leaves. Season to taste, then pile onto 4 plates and with the turkey mince and a scattering of nuts.
