Crab and White Grapefruit Salad
- 2 white grapefruit, 1 peeled and sliced, 1 halved
- 1 chopped avocado
- ½ cucumber, sliced
- Olive oil
- 75ml buttermilk
- Pinch of sugar
- 2 handfuls of soft lettuce
- 100g white crab meat
- Add the avocado to a bowl and squeeze over the juice of half the halved grapefruit. Stir in the cucumber and grapefruit slices. Squeeze the second half of the halved grapefruit into a separate bowl with 1 tbsp of olive oil, the sugar and buttermilk. Season well, and whisk to make a dressing.
- Divide the lettuce between 2 plates, then top with the avocado mixture and the fresh white crab meat. Drizzle with the dressing, and serve with thinly sliced toast, if you fancy.
