Crab Fritters

  • Veg oil for deep-frying
  • 2 sliced shallots
  • 1 egg
  • 50g flour
  • 1 tsp finely chopped dill
  • Pinch of paprika
  • 1 tsp nigella seeds
  • 2 tbsp white crab meat
  • 150ml sparkling water
  • Pinch of salt and white pepper
  • Fill a saucepan ⅔ full with the oil and heat to a sizzling temperature.
  • Mix the remaining ingredients together to make a loose batter. Add spoonfuls of the batter mixture to the hot oil, and fry for about 3 mins on each side or until golden and puffed. Remove with a slotted spoon and drain on kitchen paper, then season with salt flakes and serve.
