Crab Quesadillas

  • 2 green chillies, sliced
  • 250g mozzarella balls, sliced
  • White and brown meat of 2 crabs, mixed
  • 2 avocados
  • 2 tbsp coriander leaves
  • 4 large soft tortillas
  • Mix the crab meat with the lime zest and some seasoning. Mash the avocados with the lime juice to make a chunky guacamole, and stir in the chopped coriander.
  • Preheat the griddle with a little oil. Add a tortilla and top with ¼ of the crab mixture, guacamole and some slices of mozzarella and chilli. Griddle for 3 mins or until the bread is crisp, then fold in half and lift from the pan. Cut in half and scatter with the coriander, then serve as a delicious lunch.
