Creamy Seafood Pasta
- 2 tbsp olive oil
- 250g peeled prawns
- 150g shelled mussels
- 150g calamari tubes
- 2 tbsp butter
- 4 crushed garlic cloves
- ½ tsp chilli flakes
- 200ml white wine
- 2 tsp lemon juice
- 225ml cream
- Salt and pepper
- Small handful of chopped pasta
- 500g linguine, cooked
- Season the seafood with salt and pepper and fry in a splash of oil until golden. Remove from the pan and set aside, then add the butter to the pan and cook the garlic and chilli flakes for 2 mins. Pour in the lemon juice and wine, and allow to reduce by half.
- Pour in the cream and simmer for 5 mins, then return the seafood to the pan with the parsley, and stir well to combine. Toss the sauce with the cooked pasta and a splash of cooking water, then serve with an extra sprinkle of parsley and black pepper.
