Creamy Seafood Pasta

  • 2 tbsp olive oil
  • 250g peeled prawns
  • 150g shelled mussels
  • 150g calamari tubes
  • 2 tbsp butter
  • 4 crushed garlic cloves
  • ½ tsp chilli flakes
  • 200ml white wine
  • 2 tsp lemon juice
  • 225ml cream
  • Salt and pepper
  • Small handful of chopped pasta
  • 500g linguine, cooked
  • Season the seafood with salt and pepper and fry in a splash of oil until golden. Remove from the pan and set aside, then add the butter to the pan and cook the garlic and chilli flakes for 2 mins. Pour in the lemon juice and wine, and allow to reduce by half.
  • Pour in the cream and simmer for 5 mins, then return the seafood to the pan with the parsley, and stir well to combine. Toss the sauce with the cooked pasta and a splash of cooking water, then serve with an extra sprinkle of parsley and black pepper.
