Creamy Smoked Salmon Spaghetti
- 200g spaghetti
- 1 tsp salted butter
- 1 crushed garlic clove
- 150ml heavy cream
- 2 beaten eggs
- 3 tbsp parmesan, grated
- 120g chopped smoked salmon
- ½ bunch of chives, chopped
- Cook the spaghetti in boiling salted water until al dente. Meanwhile, melt the butter in a pan and sizzle the garlic for 1 min. Remove from the heat.
- Beat together the cream, eggs, softened garlic, and half the grated parmesan in a bowl. Stir in the smoked salmon. Drain the spaghetti and return it to the pan, then stir in the salmon mixture and the chives. Toss to combine, grind over plenty of black pepper, and serve with the remaining parmesan.
