Creole Braised Beef
- 1 tbsp oil
- 400g diced braising steak
- 1 tbsp flour
- 1 tbsp Creole seasoning
- 200ml beef stock
- 400g tin of chopped tomatoes
- 200g tin of sweetcorn, drained
- 1 chopped red pepper
- 2 sliced celery stalks
- 2 rosemary sprigs, leaves only
- 1 bay leaf
- Preheat the oven to 160C. Heat the oil in a large pan and fry the beef for 4 mins to brown all over, then stir in the flour and Creole seasoning. Gradually add the stock and tomatoes, then stir in the veggies and herbs and bring to a simmer.
- Transfer to a lidded casserole, then cover and bake for 3 hours. Serve with cooked brown rice.
