Creole Braised Beef

  • 1 tbsp oil
  • 400g diced braising steak
  • 1 tbsp flour
  • 1 tbsp Creole seasoning
  • 200ml beef stock
  • 400g tin of chopped tomatoes
  • 200g tin of sweetcorn, drained
  • 1 chopped red pepper
  • 2 sliced celery stalks
  • 2 rosemary sprigs, leaves only
  • 1 bay leaf
  • Preheat the oven to 160C. Heat the oil in a large pan and fry the beef for 4 mins to brown all over, then stir in the flour and Creole seasoning. Gradually add the stock and tomatoes, then stir in the veggies and herbs and bring to a simmer.
  • Transfer to a lidded casserole, then cover and bake for 3 hours. Serve with cooked brown rice.
