Crispy Cod with Garlic Butter
- 100g flour
- 2 beaten eggs
- 150g panko breadcrumbs
- 4 x 120g cod or hake fillets
- 3 tbsp oil
- 2 crushed garlic cloves
- Small handful of chopped parsley
- 100g softened butter
- ½ lemon, juice only
- Mix the garlic, parsley, butter and lemon juice together in a small bowl with a pinch of salt. Chill in the fridge. Tip the flour into a shallow bowl and season well. Beat the eggs in a second, and tip the breadcrumbs into a third. Dip the fish fillets into the flour, then egg, then breadcrumbs, and then fry the fish in the oil for about 5 mins, before transferring to the oven and baking for 15 mins at 220C. Serve the crispy fish with a pat of the garlic butter on top, and with a green salad on the side - delicious!
