Crispy Lemon Cod
- 6 tbsp seasoned flour
- ½ lemon, grated zest only
- 1 egg
- 100g panko breadcrumbs
- 400g cod fillets, skin and bones removed
- 2 tbsp olive oil
- Chips or salad, to serve
- Preheat the oven to 190C. Mix the flour and lemon zest on a plate, and add the beaten egg and breadcrumbs in two separate shallow bowls. Cut the fish fillets into chunks, the coat in the flour, then the egg and finally the breadcrumbs and lay on a lined baking tray.
- Bake the breaded fish in the oven for 10 mins or until golden and cooked through. Serve with chips or salad, with some extra lemon for squeezing.
