Crispy Spicy Turkey Noodles
- 2 tbsp sesame oil
- 500g minced turkey
- 5cm piece of ginger, finely grated
- 1 crushed garlic clove
- 3 tbsp runny honey
- 3 tbsp light soy sauce
- 1 tbsp sriracha
- 350g dried udon noodles or similar
- 2 limes, juice only
- 2 carrots, cut into matchsticks
- 4 shredded spring onions
- 1 bunch of coriander, chopped
- Heat 1 tbsp of oil in a frying pan, and fry the turkey mince for 10 mins or until golden and crisp. Add the garlic and ginger, and cook for a minute more, then stir in the soy, honey, and sriracha and cook for another 2 mins.
- Cook the noodles according to pack instructions, then drain and toss with 1 tbsp sesame oil, and the lime juice. Divide between bowls, and top with the crispy turkey, onion, carrot, and coriander. Serve with some lime wedges, and enjoy.
