Crispy Spicy Turkey Noodles

  • 2 tbsp sesame oil
  • 500g minced turkey
  • 5cm piece of ginger, finely grated
  • 1 crushed garlic clove
  • 3 tbsp runny honey
  • 3 tbsp light soy sauce
  • 1 tbsp sriracha
  • 350g dried udon noodles or similar
  • 2 limes, juice only
  • 2 carrots, cut into matchsticks
  • 4 shredded spring onions
  • 1 bunch of coriander, chopped
  • Heat 1 tbsp of oil in a frying pan, and fry the turkey mince for 10 mins or until golden and crisp. Add the garlic and ginger, and cook for a minute more, then stir in the soy, honey, and sriracha and cook for another 2 mins.
  • Cook the noodles according to pack instructions, then drain and toss with 1 tbsp sesame oil, and the lime juice. Divide between bowls, and top with the crispy turkey, onion, carrot, and coriander. Serve with some lime wedges, and enjoy.
