Crushed Truffle Potato Side
- 150g new potatoes
- Salt and pepper
- ½ tbsp olive oil
- 1 tbsp butter
- ½ tsp truffle, chopped
- Sprig of basil, to garnish
- 1 tbsp crumbled blue cheese
- Boil the potatoes in salty water for about 12 mins, or until tender. Drain, and season with salt and pepper. Add the olive oil and butter, and use a fork to crush. Stir in the chopped truffle and crumbled blue cheese, then serve as a side with a sprig of basil.
